The dishwashing line needs water, heat and electricity at the same time — and it runs in bursts right after service. That makes it one of the most plannable loads in the building: the timing can move, the work stays the same.
Modern installations recover heat from the waste water and the vapour. Whether that recovery actually works shows only in the temperature difference — not in the data sheet.

That depends on machine type, rack count and water temperature and cannot be stated seriously without measurement. That is exactly why the sub-meter goes in: afterwards the real number is established rather than estimated.
